Guacamole Recipe

After a long day sledding and being out in the cold, my friends and I got ice cream (I know, are we crazy or what?). But after I got home, I was really craving something salty, so I busted out the chips and salsa, with my other favorite dip--guacamole! It's become one of my favorite things to eat, and has become part of a big obsession with avocados. I've included my guacamole recipe and some yummy pictures for reference!

Guacamole Recipe:
For the small amount that I made today, use the following directions. However, many times I want to make more, so scale up ingredients if needed. Many of the ingredients also depend on preference in taste, so feel free to change it up!

Ingredients:
  • 1 ripe (soft!) avocado
  • 1-2 tbsp diced tomatoes, from a can or fresh
  • pinch of salt
  • 2 drops lemon juice (I read somewhere that lemon juice and salt helps preserve avocados, as they tend to turn brown and go bad easily after opened)
  • diced jalapenos, for taste if you like a bit of a kick!

Directions:
  1. Slice the avocado lengthwise and break apart.
  2. Use a spoon to scoop out the seed inside, discard.
  3. Use the spoon to scoop out the fruit of the avocado, into a bowl.
  4. Mash up the avocado! If it is ripe this should be easy. I like to keep some chunks in my guac.
  5. Add the salt and lemon juice, and continue to mix.
  6. Add the tomatoes and (optional) jalapenos.
  7. Enjoy with chips!
